Letha Gimble is the pastry chef at Wavy Burgers, a casual all-day eatery located inside the Friends of Friends listening bar, coffee shop, and community space in National City.
Her contributions to the eclectic and evolving menu include sweet and savory scones, cookies, cheesecake, fruity galettes, “bomb ass” biscuits loaded with butter and seasonal jam, and rich and tender brioche doughnuts (offered on weekends only).
Prior to Wavy, Letha worked at two of San Diego’s most celebrated bakeries (Wayfarer and Azucar) and was the pastry lead at Born and Raised and pastry chef at Seneca Trattoria. She has a passion for pies, loves animals, and enjoys mentoring kitchen staff members to help them reach their full potential.
